Quinoa Salad With Avocado, Tomato And Pinenuts Recipe.


Ingredients:


1/4 Cup Quinoa
2/3 Cup Vegetable Stock
1/4 Cup Parsley (Finely Chopped)
1 Avocado (Peeled, Pitted and Diced)
1/2 Tomato (Chopped)
1/2 Grapefruit (Juiced)
2 TSP Pinenuts


Recipe Instructions:


Rinse and drain the quinoa then add to a pan over medium-high heat with the vegetable stock, bring to a boil, cover and reduce the heat to low.
Cover and allow to cook on low for 15 minutes.
Once cooked remove the quinoa from the heat, fluff with a fork and allow to cool, sprinkle with the parsley, top with avocado and tomato and toss to mix.
Pour the grapefruit juice over the quinoa mix, add the pinenuts and toss to combine once more before serving.
