Red Beans & Rice With Andouille Sausage Recipe.


Ingredients:


1 Cup White Rice
1 TBSP Olive Oil
1 (12 oz) Package Andouille Sausage (Thinly Sliced)
1 Yellow Onion (Diced)
1 Green Bell Pepper (Diced)
2 Celery Ribs (Diced)
2 TBSP Tomato Paste
3 Cloves of Garlic (Minced)
2 TSP Cajun Seasoning
3 (15 oz) Cans Red Beans (Drained and Rinsed)
3 Cups Chicken Stock
1 TSP Hot Sauce
1 Bay Leaf
Pinch of Salt
Pinch of Ground Black Pepper
2 TBSP Fresh Parsley (Chopped)


Recipe Instructions:


Cook rice according to package instructions, set aside.
In a large stockpot, heat the olive oil over medium heat.
Add the andouille sausage and brown on both sides, set aside.
Add onion, bell pepper and celery and cook until tender, about 4 minutes.
Stir in the tomato paste, garlic and Cajun seasoning and cook for another 1 minute.
Stir in the red beans, chicken stock, hot sauce, bay leaf and sausage, season with salt and pepper and bring to a boil.
Cover and reduce heat to a simmer and cook for 15-20 minutes.
Uncover stockpot and continue to cook for another 15 minutes or until liquid has reduced.
Using the back of a wooden spoon, mash the red beans slightly until thickened, taste for seasoning and adjust as required.
Serve over white rice, garnished with parsley while hot.
