1/2 Red Onion (Thinly Sliced)
1/2 LB Red Snapper (Diced into 1/2" Cubes)
1/2 LB Tilapia (Diced into 1/2" Cubes)
3 Cloves of Garlic (Minced)
1 TBSP Salt
1 TSP Ground Black Pepper
1/3 Cup Fresh Cilantro (Chopped Finely)
1 Jalapeno Pepper (Seeded, Ribs Removed & Finely Diced)
3/4 Cup Fresh Lime Juice
1 Cup Cherry Tomatoes (Quartered)
1 Cup Cucumber (Diced Finely)
1 TBSP Olive Oil
In a small glass bowl, place the red onion and add 1 TBSP of salt, mix and let stand for 30 minutes until the onion has released its juices.
Rinse well and squeeze out excess liquid.
In a medium glass bowl place the tilapia and red snapper, garlic, onion, salt, pepper, chilies and lime juice, mix to combine the ingredients and place bowl in the refrigerator for 1 hour or longer.
After 1 hour, gently toss the mixture with the fresh cilantro, cucumber and tomato, add a drizzle of olive oil and mix gently.
Place in a serving dish and serve immediately or chill for up to another 4 hours before serving.
