Ricotta & Garden Pea Bruschetta Recipe.


Ingredients:


8 Slices Italian Bread (Toasted)
1 Cup English Peas (Cooked, Drained and Chilled)
1 Lemon (Juiced and Zested)
2 TBSP Fresh Dill (Chopped)
2 TBSP Olive Oil
Pinch of Salt
Pinch of Ground Black Pepper
1/3 Cup Ricotta Cheese


Recipe Instructions:


In a small glass bowl add the peas, lemon juice, salt and pepper and mix to coat.
Set aside.
In another small glass bowl, add the ricotta cheese, lemon zest and 1 TBSP of olive oil, mix together gently until fully combined.
Spread each slice of the toasted bread with the ricotta spread, spread the pea mixture evenly over the ricotta and sprinkle with the chopped dill and a drizzle of the remaining olive oil.
Serve immediately.
