Roast Beef And Gravy Recipe.


Ingredients:


For the Beef
3 Lbs Boneless Rump Roast
1 TBSP Olive Oil
3 Cloves Garlic (Quartered)
Pinch of Salt
Pinch of Ground Black Pepper
For the Gravy
1 Cup Red Wine
1 TBSP Cornstarch


Recipe Instructions:


Remove beef from the refrigerator and allow to sit on the counter, covered for 1 hour.
Preheat the oven to 375 degrees.
Pat the roast dry with paper towels and using a sharp knife, cut 6 slits into the roast, place a sliver of garlic into each slit.
Rub the beef all over with olive oil and sprinkle with salt and pepper.
Place roast on a roasting rack in the middle of the preheated oven with a pan below to catch the beef drippings.
After 30 minutes, reduce the oven temperature to 225 degrees and continue cooking the roast for another 1 1/2 to 2 1/2 hours.
Once cooked, remove the roast from the oven, tent with foil and rest for 20 minutes.
Meanwhile, make the gravy by placing the pan of drippings on the stove over medium heat.
Add some of the red wine to the drippings and degalze the pan, dissolve the cornstarch in a little water and add to the drippings, stirring quickly to thicken the gravy.
Add salt and pepper to taste, pour over the roast beef when sliced to serve.
