4 Eggs
1 Pie Crust
1/2 Cup Brie Cheese (Diced)
1/2 Cup Cottage Cheese
1 TBSP Chives (Chopped)
1/2 Cup Kale (Roughly Chopped)
1 Beetroot (Roasted Until Cooked & Diced)
Preheat oven to 360 degrees.
Line a 9" pie pan with ready-made pie crust and prick the bottom of the crust with a fork to help bake evenly.
Add eggs and cheese to a blender and process until smooth and combined (roughly 30 seconds).
Add in remaining ingredients and give the mixture a quick blitz to combine.
Pour the egg mixture in to the pie crust and place into your oven for 40 minutes.
Remove the quiche from the oven and allow to cool before cutting into eight slices and serving!
