1 Salmon Fillet
2 TBSP Balsamic Vinaigrette
3 Cups Baby Spinach
1/4 Cup Avocado (Cubed)
1 TBSP Walnuts (Chopped)
1 TBSP Sunflower Kernels (Toasted)
1 TBSP Dried Cranberries
Drizzle the salmon with 1 TBSP of balsamic vinaigrette.
Coat a broiler pan with non-stick spray and place salmon fillet on the pan.
Broil 4-5 inches from the heat of the broiler for 10-15 minutes or until salmon flakes easily with the prongs of a fork.
Cut salmon into 2 pieces.
In a large glass bowl, toss the spinach with the remaining balsamic vinaigrette.
Divide between plates and top with the salmon, avocado, walnuts, sunflower kernels and cranberries.
