Salmon Filet With Cherry Tomatoes And Capers Recipe.


Ingredients:


4 Filets of Salmon (Skin Removed)
2 Cups Cherry Tomatoes
4 TBSP Capers
2 Garlic Cloves (Crushed)
1 TBSP Olive Oil
1 Lemon (Zested and Juiced)
Pinch of Ground Black Pepper


Recipe Instructions:


Preheat oven to 375 degrees.
In a medium glass bowl, combine the cherry tomatoes, capers, garlic, olive oil, lemon zest, lemon juice, salt and pepper, mix well.
Place a salmon filet on a piece of aluminium foil, twice as long as the filet, spoon 1/4 of the tomato mixture on top of the salmon and fold the aluminium foil over the filet, making sure to seal the edges all the way around to form a packet.
Place in preheated oven for 30 minutes until the tomatoes have burst and the salmon flakes.
