1/2 Cup Arugula
1/2 Cup Chicory Leaves
1/4 Cup Smoked Salmon (Sliced)
1/2 Avocado (Peeled, Stoned and Sliced)
8 Walnuts (Lightly Crushed)
1 TBSP Capers
1 Medjool Date (Pitted and Chopped)
1 TBSP Olive Oil
1/4 Lemon (Juiced)
1 TBSP Fresh Parsley (Chopped)
10 Celery Leaves (Chopped)
1 Celery Rib (Sliced)
1/4 Red Onion (Sliced)
In a large glass bowl, mix all of the salad leaves until well combined.
Set aside.
In a separate medium glass bowl combine the remaining ingredients and mix until evenly combined.
Place the salad leaves on a plate and top with the salmon mixture, enjoy cold.
