Scottish Shortbread Recipe.


Ingredients:


4 Oz Plain Flour
4 Oz Butter (Unsalted)
2 Oz Fine Sugar (Caster Sugar)
2 Oz Ground Rice
Demerara Sugar


Recipe Instructions:


Preheat oven to 375 degrees and line a baking sheet with parchment paper, set aside.
In a medium bowl, cream together the butter and sugar until light and fluff.
Add in the flour and ground rice, mixing well.
Using your hands, knead the mixture to bring it together.
Turn the dough onto a lightly floured work surface and roll into a thick log.
Roll log of dough in the demerara sugar and cut into 14 slices.
Place each slice on the lined baking sheet and cook for 15 minutes or until golden brown.
Remove from the oven and place on a wire tray to cool.
