Shakshuka Stew With Egg Recipe.


Ingredients:


1 TBSP Olive Oil
2 Red Onions (Roughly Chopped)
1 Red Chili (Deseeded and Chopped Finely)
2 Cloves of Garlic (Sliced)
1 Bunch of Fresh Cilantro (Chopped)
4 Cups Cherry Tomatoes
4 Eggs


Recipe Instructions:


In a large non-stick skillet, heat the olive oil over medium heat.
Add the onions, chili, garlic and cilantro and saut? For 5-6 minutes until softened.
Stir in the cherry tomatoes and simmer, covered for 8-10 minutes.
Make 4 small indentations into the sauce and crack and egg into each one, replace pan lid and continue to cook over low heat until the eggs are cooked to your required doneness.
Sprinkle with a little extra cilantro and serve piping hot in individual bowls.
