2 LBS Mashed Potatoes
2 TBSP Olive Oil
1 Large Onion (Diced)
3 Cloves of Garlic (Minced)
2 Large Carrots (Peeled and Diced)
2 Stalks of Celery (Diced)
1 1/2 LBS Ground Lamb
1 TSP Ground Black Pepper
1 Cup Vegetable Broth
2 TBSP Tomato Paste
1 TBS Worcestershire Sauce
1 TSP Rosemary (Chopped)
1 TSP Thyme (Chopped)
1 Cup Frozen Peas
Pre heat oven to 400 degrees.
In a large oven-safe saut? Pan, heat the oil on a medium heat and add the onion and garlic, saut? For 2 minutes.
Add the diced carrots, celery, ground lamb and cook for 10-12 minutes until the meat is browned.
Drain fat from the pan and add the broth, tomato paste, Worcestershire sauce and herbs and pepper, simmer for 8 minutes until the sauce is thickened.
Add frozen peas and mix to combine evenly.
Turn off the stove and flatten the meat mixture to a single layer.
Take the mashed potatoes and put spoonsful of mashed potato on top of the meat mixture until fully covered.
Bake in the pre heated oven for roughly 30 minutes or until the mashed potatoes turn golden brown.
