1/2 LB Shrimp (Peeled and Deveined)
2 TBSP Olive Oil
1 TSP Orange Zest
1 Pinch Crushed Red Pepper Flakes
Pinch of Salt
Pinch of Ground Black Pepper
1 Head Romaine Lettuce (Shredded)
2 Oranges (Segmented)
1 Avocado (Peeled, Pitted and Sliced)
1/2 Lemon (Juiced)
In a small glass bowl combine the shrimp, olive oil, orange zest and pepper flakes and toss to coat the shrimp evenly.
Heat a non-stick skillet over a medium heat and once hot, add the shrimp and dressing mixture, cook for 2-3 minutes each side until the shrimp turn pink and begin to turn slightly brown at the edges.
Remove from the heat and set aside.
In a large glass bowl, combine the shredded lettuce, orange segments and avocado, toss to combine.
In a small glass bowl whisk together the olive oil, lemon juice, salt and pepper.
Place the lettuce mixture on a platter, top with the shrimp and drizzle with the lemon dressing, serve immediately.
