8-10 Shrimp (Deveined and Shelled)
2 TBSP Soy Sauce
2 TBSP Olive Oil
1/4 Cup Soba Noodles
1 Garlic Clove (Minced)
1 Green Chili (Finely Chopped)
1" Fresh Ginger (Minced)
1 Rib Celery (Sliced)
1/2 Cup Green Beans (Chopped)
1/2 Cup Kale (Roughly Chopped)
1/2 Cup Chicken Stock
Heat a non-stick skillet over high-heat, add the shrimp and 1 TSP of soy sauce and 1 TSP of oil, cook for 3 minutes.
Transfer the shrimp to a plate and set aside.
Bring a large pan of water to a rolling boil over medium-high heat and cook the noodles according to the package instructions.
Once cooked, drain and set aside.
In the same cleaned skillet as the shrimp, over a medium-high heat, cook the garlic, chili, ginger, onion, celery, beans and kale in the remaining olive oil for 3-4 minutes.
Add the chicken stock and simmer for 3-4 minutes until the vegetables are cooked but still crunchy.
Add the cooked shrimp and soba noodles to the pan, bring back to the boil, stir and serve.
