1 LB Medium Shrimp (Deveined, Peeled and Tails Removed)
1/2 TSP Chipotle Chili Powder
1/2 TSP Chili Powder
1/2 TSP Cumin
1/4 TSP Paprika
1/4 TSP Ground Coriander
Pinch of Salt
Pinch of Ground Black Pepper
1 TSBP Olive Oil
In a medium sized glass bowl, whisk together chipotle chili powder, chili powder, cumin, paprika, coriander salt and pepper.
Add shrimp and gently toss to coat.
In a large non-stick skillet over medium-high heat, heat the olive oil.
Add shrimp and cook until opaque and cooked through, tossing halfway to ensure the shrimp gets coated with cooking juices.
Remove skillet from heat and add shrimp mixture to a tortilla with toppings of your choice, sour cream and a squirt of lime juice.
