Shrimp, Lime & Cilantro Ceviche Recipe.


Ingredients:


1 LB Shrimp (Deveined, Peeled & Diced)
2 Limes (Juiced)
1 English Cucumber (Diced)
1 1/2 LB Tomatillos (Husked, Rinsed and Quartered)
1 Cup Cilantro (Packed & Chopped)
1 Jalapeno (Diced)
1/4 Cup Red Onion (Sliced)
1 TSP Sugar
1/2 TSP Salt
1 TBSP Olive Oil


Recipe Instructions:


In a large glass bowl, place the shrimp and lime juice, place bowl in the refrigerator for 20 minutes, tossing half way through to ensure even coverage of lime juice.
Remove bowl from refrigerator and add the English cucumber, mix well.
Place remaining ingredients into the bowl of a food processor and pulse until very finely chopped, but not smooth.
Add shrimp and cucumber mixture to the bowl.
Place mixture back into the large glass bowl and return to the refrigerator for 6 hours.
Serve when chilled and garnish with lime zest.
