8 Large Organic Eggs
1/2 Cup Unsweetened Almond Milk
2 TBSP Fresh Dill (Minced)
2 Cups Baby Spinach
1/2 Shallot (Finely Diced)
6 Oz Smoked Salmon Filet (Chopped)
1/4 Cup Goat Cheese
Preheat oven to 350 degrees.
Spray a muffin pan with coconut oil spray.
In a medium glass bowl, add the eggs and whisk, adding the almond milk and dill until well combined.
Add the smoked salmon and spinach to the egg mixture and mix to combine evenly.
Fill each of the sections of the muffin tin with the egg, salmon and spinach mixture 3.
4 of the way to the top.
Add a few crumbles of the goat cheese to the top of each cup and stir gently to mix.
Place the muffin pan into the preheated oven and bake for 16-18 minutes until the mixture if firm.
Remove from oven and allow to cool before removing each of the frittatas from the tin.
Serve immediately.
