2 Medium Eggs
? Cup Smoked Salmon (Sliced)
1/2 TSP Capers
? Cup Arugula (Torn)
1 TSP Fresh Parsley (Chopped)
1 TSP Olive Oil
Crack the eggs into a medium glass bowl and whisk until well beaten.
Add the sliced salmon, capers, arugula and parsley, mix until evenly combined.
In a non-stick frying pan, heat 1 tsp of olive oil until hot.
Add the egg mixture and using a spatula move the mixture around until it is evenly coating the pan.
Reduce heat and let the omelet cook through until firm, slide the spatula around the edges of the omelet and fold in half to serve.
