4 Center Cut Pork Chops (bone-In 1 1/2" Thick)
1 TSP Ground Black Pepper
1 TBSP Olive Oil
1 White Onion (Halved and Sliced)
8 Oz Mushrooms (Sliced)
2 TBSP Butter (Unsalted)
2 Cloves of Garlic (Minced)
2 TBSP All Purpose Flour
2 Cups Chicken Broth (Low Sodium)
Preheat oven to 350 degrees.
Heat a cast iron skillet over medium high heat and season the pork chops generously on both sides with pepper.
Add pork chops to the cast iron skillet and sear for 3-4 minutes per side over high heat.
Transfer them to a 9x13 pan and finish cooking in the oven until the internal temperature reaches 145 degrees on a thermometer.
Return the skillet to medium high heat, add the olive oil, onion, mushrooms and saut? For 6-8 minutes until the mushrooms are soft and onions are translucent.
Add in the butter and garlic and cook for another minute.
Sprinkle in the flour and stir until all white specks have gone, pour in the chicken broth and bring mixture to a steady simmer, stirring until the sauce has thickened.
When pork is cooked return to the skillet and cover with the sauce mixture, serve hot.
