2 Cloves Garlic (Minced)
1 TBSP Olive Oil
4 Cups Cauliflower Rice
1 (10oz) Can Diced Tomatoes with Green Chilies)
1/2 TBSP Chili Powder
1/2 TBSP Smoked Paprika
1/2 TBSP Ground Cumin
1/4 TSP Dried Oregano
1/4 TSP Salt
1/4 TSP Ground Black Pepper
In a skillet, over medium heat, add the olive oil and heat until shimmering.
Once the oil begins to shimmer, add the minced garlic and saut? For 1 minute.
Add the cauliflower rice and continue to saut? For another 6 minutes or until the cauliflower begins to get tender.
Next, add the remaining ingredients and cook for another 3-4 minutes or until most of the liquid has evaporated.
Adjust the seasoning and serve hot.
