1 (15oz) Can Pinto Beans (Cooked, Drained)
1 Red Bell Pepper (Diced)
1 Green Bell Pepper (Diced)
1 Cup Sweetcorn (Rinsed)
1/2 TSP Ground Black Pepper
2 Limes (Zested and Juiced)
1 TBSP Olive Oil
1 Avocado (Pitted, Peeled and Chopped)
In a large glass bowl combine the beans, peppers, corn and ground pepper and mix to evenly combine.
Add the lime zest, juice, avocado and olive oil and stir to mix well.
Cover and place in the refrigerator for 30 minutes or until ready to serve.
