1 (12 Oz) Can Spam
1/2 Cup All Purpose Flour
1/2 Cup Cornmeal
1 TSP Baking Powder
1/2 TSP Salt
1/2 TSP Sugar
1 TBSP Vegetable Shortening
1/3 Cup Whole Milk
1 Egg
1 Hard Boiled Egg (Chopped Finely)
1 TSP Fresh Chive (Chopped)
Pinch of Salt
Pinch of Ground Black Pepper
Cut the Spam into 2" by 3/4" pieces and insert a skewer into the end of each slice pushed halfway through the block.
In a large saucepan over medium heat, add oil and heat ready to deep fry the Spam corndogs.
In a medium sized glass bowl, add flour, cornmeal, baking powder, salt and sugar, stir to combine well.
Add shortening and cut in with a fork until mixture resembles the size of small peas.
To dry mixture add the milk and egg, stir to combine, pour batter mixture into a tall glass or Pyrex jug.
Dip each of the Spam skewers into the batter mixture, making sure to coat evenly and allowing excess batter to drip back into the glass or Pyrex jug.
Gently place Spam corndogs into the hot oil and deep fry for roughly 3 minutes until the batter turns a light crispy golden-brown color.
Remove cooked corndogs from the oil and drain on a plate with paper kitchen towel.
Serve warm, with ketchup, mustard or dressing of your choice.
