Spanish Mussels Recipe.


Ingredients:


3 TBSP Olive Oil
2 LBs Mussels (Picked and Scrubbed)
Pinch of Ground Black Pepper
3 Cups Crushed Tomatoes
1 Shallot (Diced)
2 Cloves of Garlic (Minced)
2 Cups Vegetable Stock (Low Sodium)
1/3 Cup Fresh Cilantro (Chopped)


Recipe Instructions:


Add olive oil to a large skillet over medium-high heat until shimmering, reduce the heat to medium and add shallot, cook for 3 minutes or until fragrant and translucent.
Add the garlic, vegetable stock, tomatoes and ground black pepper, stir well and bring to a simmer for 10-12 minutes.
Add the fresh mussels and cilantro and toss to mix evenly in the skillet, cover and cook for 10 minutes.
Remove skillet from the heat, allow to cool for 1 minute while still covered.
Remove pan lid, serve and enjoy while still steamy and hot.
