Spiced Beetroot Salad With Chickpeas Recipe.


Ingredients:


8 Baby Beetroots (Scrubbed and Halved)
1/2 TSP Sumac
1/2 TSP Ground Cumin
2 Cups Chickpeas (Drained and Rinsed)
2 TBSP Olive Oil
1 Lemon (Zested and Juiced)
1/2 Cup Coconut Yogurt
1 TBSP Harissa Paste
1 TSP Crushed Red Pepper Flakes
Pinch of Salt
Pinch of Ground Black Pepper


Recipe Instructions:


Preheat oven to 400 degrees.
Line a baking sheet with parchment paper, set aside.
In a large glass bowl, mix together the spices and add the chickpeas and beetroot, drizzle with oil, season with salt and pepper, mix again to coat evenly.
Place beetroot and chickpeas on baking sheet and roast in the preheated oven for 30-45 minutes.
While the beetroots and chickpeas are cooking, in a small glass bowl mix the lemon zest, lemon juice and yogurt together, swirl the harissa through the citrus yogurt.
Spread the yogurt mixture on a serving plate, top with the roasted vegetables and sprinkle with the crushed red pepper flakes.
Serve immediately.
