1/2 lb lamb shoulder, sliced into 1/4-inch thick pieces
1 TBSP Chinese cooking wine (Shaoxing wine)
1 TBSP cumin powder
1 TSP cayenne pepper powder
1 TSP cornstarch
1/2 lb dry wheat noodles
2 TBSPs vegetable oil
1 TBSP garlic, minced
1 TBSP green onions, chopped
1 TBSPs cumin seeds (optional)
1/4 cup red onion, sliced (about 1/4 red onion)
1 + 1/2 TBSPs soy sauce
1 TSP sesame oil
1 TSP sugar
⅓ cup bean sprouts
Cut the lamb shoulder into 1/4-inch thick stir fry strips.
Place into a medium mixing bowl and add in cooking wine, cumin powder, cayenne pepper and cornstarch.
Stir well to combine well.
Cover the bowl with cling wrap and refrigerate for at least 30 minutes.
