6 Eggs
2 TBSP Greek Yogurt
1/2 TSP Onion Powder
1/2 TSP Garlic Powder
1/2 TSP Ground Black Pepper
1 TSP Olive Oil
3 Cups Baby Spinach
1/2 Pint Cherry Tomatoes (Halved)
1/2 Cup Feta Cheese
1 Cup Quinoa (Cooked)
In a large glass bowl, mix together the eggs, yogurt, onion powder, garlic powder and pepper, set aside.
In a large non-stick skillet, over medium heat, add the oil and heat until shimmering, once oil is shimmering, add the spinach and cook for 3-4 minutes until slightly wilted.
Once spinach has started to wilt, add the tomatoes and coo until they release their liquid and begin to soften, about 3 minutes.
Stir in the egg mixture and stir occasionally so that the eggs begin to scramble and the mixture is evenly combined.
Once the eggs begin to set, add the feta cheese and the cooked quinoa, mix to combine well.
Serve in individual bowls.
