1 1/4 Cups Baby Spinach
3 Button Mushrooms (Sliced)
1 Scallion (Chopped)
3 Eggs
1 TBSP Milk
1/4 Cup Mozzarella Cheese (Shredded)
1 TBSP Butter (Unsalted)
Pinch of Salt
Pinch of Ground Black Pepper
In a large skillet over medium high heat, saut? The spinach and mushrooms in the butter, stirring occasionally, for about 4 minutes.
While the spinach and mushrooms are cooking, combine the eggs and milk in a medium glass bowl along with the salt and pepper until evenly mixed.
Stir in the chopped scallion.
Once the spinach and mushrooms are lightly browns and cooked, pour the egg mixture into the skillet and allow them to begin setting, once eggs start to set, gently move them around the pan while breaking up the egg.
When the eggs are almost completely set, sprinkle with the shredded mozzarella, cover the pan with a lid, turn off the heat and allow the cheese to melt.
Once cheese has melted, transfer eggs to a plate and serve hot.
