2 Large Eggs
1 TBSP Olive Oil
1/2 Small Red Onion (Chopped)
1/2 Red Bell Pepper (Chopped)
1 Cup Baby Spinach
Pinch of Sea Salt
In a skillet over medium-high heat, add the olive oil.
Once olive oil is shimmering, add the onions and bell pepper and cook for 1 minute, then add the spinach and cook for 2-3 minutes or until the spinach begins to wilt.
Place the vegetables in a small glass bowl and set aside.
In another small glass bowl, crack the 2 eggs and beat until they are fully mixed.
Add a pinch of salt and ground black pepper to taste.
Add eggs to the hot skillet and spread around to cover the bottom of the pan.
After 1 minute of cooking, add the vegetable mixture to one half of the omelet, cook for a further minute then fold over one half of the omelet to the other to cover the vegetables.
Cook for 1 more minute.
Slide the cooked omelet onto a plate and adjust seasoning to taste.
