Spinach Guacamole Recipe.


Ingredients:


4 Avocados (Pitted, Peeled and Chopped)
1/4 Cup Red Onion (Finely Diced)
1/2 Cup Roma Tomatoes (Diced)
1/2 Cup Baby Spinach (Stems Removed and Cooked)
1 Jalapeno (Deseeded and Finely Chopped)
3 Clove's of Garlic (Finely Chopped)
1 Lime (Zested and Juiced)
1 Lemon (Zested and Juiced)


Recipe Instructions:


In the bowl of a food processor, add the cooked spinach and process until finely chopped, transfer to a small glass bowl and set aside.
In a medium glass bowl, using the back of a fork, mash the avocados until smooth and creamy, add the onion, tomatoes, jalapeno, garlic, lime and lemon juice and zest and mix gently to combine.
Finally, add the chopped and cooked spinach and a pinch of salt and stir a few times to evenly mix.
Transfer the spinach guacamole to a container with an air-tight lid and place in the refrigerator for 30 minutes or until ready to use.
