Spinach, Chard And Feta Shakshuka Recipe.


Ingredients:


1/3 Cup Olive Oil
1 Large Red Onion (Finely Chopped)
12 Oz Chard (Stemmed and Chopped)
12 Oz Spinach (Stemmed and Chopped)
1/2 Cup Dry White Wine
1 Small Jalapeno Pepper (Thinly Sliced)
2 Cloves Garlic (Thinly Sliced)
1/2 TSP Salt
1/2 TSP Ground Black Pepper
1/2 Cup Chicken Broth
2 TBSP Unsalted Butter
6 Large Eggs
1/2 Cup Feta Cheese (Crumbled)


Recipe Instructions:


In a large skillet over medium heat add the oil.
Add onion and cook, stirring until onion turns translucent and soft but not browned, roughly 6-7 minutes.
Add the chard and spinach, a few handfuls at a time and cook, stirring often until wilted, about 5-6 minutes.
Next add the wine, sliced jalapeno, garlic, salt and pepper and continue to cook stirring occasionally until the wine is absorbed and the garlic softens, roughly 34 minutes.
Next add the chicken broth and butter and cook, stirring until butter is melted and some of the liquid is absorbed, roughly 2-3 minutes.
Crack the 6 eggs over the vegetable mix.
Cover and cook over a medium heat until the egg whites are set, roughly 4-5 minutes.
Remove from the heat, sprinkle with the crumbled feta cheese, cover and let stand for 2-3 minutes before serving with crusty bread.
