1 LB Beef Filet
2 Lemons (Juiced)
2 Cloves Garlic (Minced Finely)
Pinch of Sea Salt
Pinch of Ground Black Pepper
1 Anchovy Filet
4 Egg Yolks
Chop the meat and anchovy very finely using a sharp chefs knife with a long blade.
Place the chopped meat and anchovy into a large glass bowl along with the lemon juice, garlic, salt and pepper and mix until well combined.
Allow the meat to sit in the refrigerator for 1-2 hours to allow the meat to 'cook' in the lemon juice.
After sitting, mix again, scoop out roughly 2-3 Oz and place on a bowl, using the back of a TBSP, place an indent into the middle of the tartare mixture and top with a raw egg yolk, serve immediately.
