1/2 Cup Butter (Unsalted, Softened)
1 TBSP Granulated Sugar
1 Cup Fresh Strawberries (Hulled and Chopped)
8 Oz Cream Cheese (Room Temperature)
1 TSP Vanilla Extract
2 1/2 Cups Powdered Sugar
In a medium saucepan, over medium-low heat, add the strawberries, granulated sugar and 2 TBSP of water.
Cook for 20 minutes, while constantly mixing until it turns into a jam.
Transfer strawberry mixture to a medium glass bowl and allow to cool.
In a large glass bowl, add the cream cheese and butter and using an electric mixer, beat until soft and fluffy, about 4 minutes.
Add the strawberry mixture and vanilla extract and combine until evenly mixed.
Next add the powdered sugar and beat until fully combined.
Use immediately.
