1 Ripe Avocado
3 Roma Tomatoes (Diced)
1 Jalapeno (Deseeded and Finely Chopped)
2 TSP Fresh Cilantro (Chopped)
1/2 Lime (Juiced)
Pinch of Salt
Pinch of Ground Black Pepper
2 TBSP Plain Greek Yogurt
2 Large Eggs (Scrambled)
Cut the avocado in half and remove the pit carefully with a sharp knife.
Combine the diced tomatoes, jalapeno, cilantro, and lime juice in a small glass bowl.
Season with salt and pepper to taste.
Place half the mixture in each avocado half.
Top with a drizzle or spoon of sour-cream and serve with a side of scrambled eggs.
