Stuffed Breakfast Sweet Potatoes Recipe.


Ingredients:


1 Sweet Potato
1/4 Cup Cauliflower Rice
1/2 Lime (Juiced)
Pinch of Salt
Pinch of Ground Black Pepper
1/3 Cup Chicken (Cooked and Shredded)
2 TBSP Salsa Verde
1 TBSP Fresh Cilantro (Chopped)


Recipe Instructions:


Wash and dry the sweet potato the slit a couple of times with a sharp knife.
Place sweet potato in the microwave for 6-8 minutes until the insides are soft enough to scoop out.
Cut sweet potato in half and scoop the insides out, leaving a little on the edge of the skin, set aside.
In a small pan over medium-high heat, saut? The cauliflower rice with a little olive oil.
Squeeze over the lime juice and mix, season with salt and pepper to taste.
Remove from heat.
Reheat shredded chicken and add the salsa Verde, mix well.
Layer 2 TBSP of the cauliflower rice in each half of the sweet potato, then top with the shredded chicken and fresh cilantro.
Serve warm.
