4 Oz Suet
8 Oz Self Raising Flour (Sifted)
1/2 Cup Water (Approx)
4 Oz Butter (Unsalted)
4 Oz Fine Sugar (Caster Sugar)
1 Lemon
Lightly grease and line the base of a 2 pint pudding basin, set aside.
In a large glass bowl, stir together the suet, flour and enough water to form a soft, but not sticky dough.
Roll out 2/3 of the dough on a lightly floured surface to about 5mm thick.
Line the basin with the dough ensuring and splits are well sealed.
Place half of the butter and sugar into the middle of the bason, prick the lemon with a fork all over and place on top of the butter and sugar, fill cavity in the basin with the remaining butter and sugar.
Cover with greaseproof paper and cook in the microwave on medium high for 7-8 minutes or until the pudding has risen and is slightly firm to the touch.
Allow pudding to stand for 5 minutes before turning out onto a warmed dish.
Serve immediately with yogurt, English custard or cream.
