Swedish Meatballs Recipe.


Ingredients:


For Meatballs

2 TBSP Butter
1 LB Ground Beef
1 LB Ground Pork
1/2 Cup Crushed Pork Rinds
2 Large Egg Yolks
1/4 TSP Ground All Spice
1/4 TSP Ground Nutmeg
1/2 TSP Sea Salt
1/2 TSP Ground Black Pepper

For Gravy

1/4 Cup Unsalted Butter
1/3 Cup Crushed Pork Rinds (Crushed Until Almost Dust Like)
4 Cups Beef Broth
3/4 Cup Sour Cream
Pinch of Salt
Pinch of Ground Black Pepper


Recipe Instructions:


In a large glass bowl, combine ground beef, ground pork, crushed pork rinds, egg yolks, allspice, nutmeg, salt and pepper and using a wooden spoon stir until well combined.
Roll meat mixture into 1" to 1 1/2" meatballs.
Heat butter in a large skillet over medium heat.
Add meatballs and brown on all sides, about 5-6 minutes.
Transfer to a paper towel lined plate.
For the gravy, melt butter in a skillet, mix in the finely crushed pork rinds stirring continuously for 1 minute.
Slowly begin to whisk in the beef broth and cook, whisking continuously until the gravy begins to thicken, about 2-3 minutes.
Stir in the sour cream and season with salt and pepper to taste.
Place the meatballs into the gravy and stir occasionally until heated through.
Serve immediately.
