Sweet Potato & Fruit Casserole Recipe.


Ingredients:


1 1/2 LBs Sweet Potatoes (Washed, Peeled and Cut into Chunks)
1 Cup Mixed Dry Fruit (Apricots, Plums, Apples, Raisins, Etc)
1/2 Cup Brown Sugar


Recipe Instructions:


Preheat oven to 350 degrees, lightly grease a medium baking dish, set aside.
Soak the dried fruit in water for 3 hours, drain and discard the water.
Add the chunks of sweet potato the bottom of the baking dish, then a layer of the fruit and again more sweet potato.
Sprinkle 2 TBSP of water over the top of the casserole and place in the oven to bake for 30-45 minutes or until water has evaporated and the sweet potato is tender.
Remove from the oven, sprinkle with a little additional brown sugar and serve warm.
