Sweet Potato Shakshuka With Eggs Recipe.


Ingredients:


4 Slices Bacon (Cut Into 1/2 Thick Pieces)
1 Bell Pepper (Seeded and Diced)
1 Onion (Diced)
1 Sweet Potato (Peeled and Diced)
2 Cups Kale (Roughly Chopped)
1/4 TSP Ground Cumin
1/4 TSP Garlic Powder
1/4 TSP Paprika
Pinch of Salt
Pinch of Ground Black Pepper
4 Eggs
1 Scallion (Sliced)


Recipe Instructions:


Heat a large non-stick skillet over medium heat, add the bacon and cook until golden brown and crispy, remove the bacon from the skillet and allow to drain on a paper towel lined plate.
To the same pan the bacon was cooked in, add the bell pepper and diced onion and cook for 3-5 minutes until softened.
Add the diced sweet potato and spices to the skillet, cooking for 10-15 minutes while stirring occasionally until the sweet potato is tender.
Place a lid on the skillet during the last 4 minutes of cooking to soften the sweet potato until it is fork tender.
Add the bacon back into the skillet along with the chopped kale and stir to mix evenly.
Continue to cook for another 2-3 minutes or until the kale has wilted.
Using the back of a spoon, create 4 wells in the mixture and crack and egg into each one.
Place the lid back on the pan and cook until eggs are done to your liking.
Serve in individual bowls with a sprinkling of chopped scallion.
