2 Cups Cucumber (Finely Chopped)
1/2 Cup Onion (Finely Chopped)
1/2 Cup Distilled White Vinegar
1/4 Cup Granulated Sugar
1 TSP Cornstarch (Mixed with 1 TSP Water)
In a sieve, over a medium bowl, place cucumber and onion and toss with 3/4 TSP salt, let drain for 4 hours.
Discard liquid in bowl and wrap cucumber and onion mixture in a kitchen towel and squeeze out excess liquid.
In a pot over medium-high heat, add vinegar, sugar and remaining 1/4 TSP salt and bring to a boil, stirring until sugar has all dissolved, reduce to 1/2 cup.
Add cucumber and onion mixture to vinegar in pan and stir in cornstarch mixture.
Simmer for 2 minutes.
Transfer relish to a glass mason jar with tight fitting lid to cool.
Can be used immediately or will last up to 30 days in the refrigerator.
