Sweet Short Crust Pastry Recipe.


Ingredients:


2 Cups All Purpose Flour
1 Cup Confectioners Sugar
8 TBSP Butter (Cubed)
3 Egg Yolks
2 TBSP Water (Very Cold)
Pinch of Salt


Recipe Instructions:


In a large, clean glass bowl, add the butter and salt and beat until creamy.
Sift the confectioners sugar into the butter mixture and beat to combine well.
Whisk the egg yolks and add them to the sugar and butter mixture, mixing until smooth.
Gently mix in the flour to form a smooth dough by cutting through the dough several times.
Turn the dough out onto a work surface lined with parchment paper and fold the dough over to fully incorporate all of the flour.
Lightly flour the work surface and form the dough into 2 discs, wrap each disc with plastic wrap and place in refrigerator for 1 hour to chill.
To use, remove from refrigerator, place on a lightly floured surface, knock the dough a couple of times with a floured rolling pin and roll to shape.
