1 TBSP Olive Oil
1/2 Onion (Roughly Chopped)
1/2 TSP Chili Powder
Pinch of Salt
Pinch of Ground Black Pepper
8 Hot Dogs
2 TBSP Butter (Unsalted)
2 TBSP All Purpose Flour
1 Cup Whole Milk
1 1/2 Cup Cheddar Cheese (Shredded)
1/2 Cup Monterey Jack Cheese (Shredded)
1/4 TSP Paprika
8 Hard Taco Shells
1 Cup Guacamole
1/4 Cup Sour Cream
1/2 Cup Pickled Jalapenos
In a large skillet over a medium heat, heat the olive oil.
Add onion and chili powder and season with salt and pepper.
Cook until the onion is almost tender, roughly 5 minutes, then increase the heat to medium-high and add the 8 hot dogs to the skillet.
Cook until the hot dogs are slightly charred, roughly 3 minutes per side.
Remove from heat.
In a medium saucepan over medium heat, melt the butter.
Whisk in the flour and cook for about a minute, stir in the milk and bring mixture to a steady simmer.
When the milk starts to thicken slightly, add in the cheeses, whisking constantly until the sauce is smooth.
Season with salt, pepper and paprika.
In each taco shell, spoon a little guacamole, some of the cooked onions and place a hot dog on top.
Drizzle with the cheese sauce, top with sour cream and jalapenos and enjoy!
