1 TBSP Peanut Oil
1 Head of Broccoli (Chopped)
1 Red Bell Pepper (Chopped)
8 Baby Bella Mushrooms (Sliced)
1 LB Firm Tofu (Cubed)
1/2 Cup Peanut Butter (Crunchy)
1/2 Cup Hot Water
2 TBSP Rice Vinegar
2 TBSP Soy Sauce
1 1/2 TBSP Molasses
Pinch of Ground Cayenne Pepper
In a medium glass bowl, combine the cayenne pepper, peanut butter, molasses, hot water, soy sauce and rice vinegar until evenly combined and a smooth sauce has been created.
In a wok or large skillet over medium-high heat, add 1 TBSP of peanut oil and when it begins to shimmer, stir fry the tofu cubes, broccoli, mushrooms and bell peppers for 8-10 minutes until cooked.
Add in the peanut teriyaki mixture, stir to evenly coat and cook for a further 5-6 minutes.
Remove pan from heat and serve hot.
