1 Block Extra Firm Tofu (Cut into Bite Sized Pieces)
1 TBSP Olive Oil
1 Red Onion (Sliced)
3 Bell Peppers (Sliced)
2 Cloves Garlic (Minced)
Pinch of Salt
Pinch of Ground Black Pepper
In a skillet over medium-high heat, add the olive oil and once shimmering, add the tofu and sear until brown and crispy on the edges, about 8 minutes.
Remove from the skillet and set aside.
Add onion to the same skillet and saut? For 3 minutes, next add in the sliced bell peppers and continue to cook until they are soft and tender, about 3 minutes.
Stir in the garlic and cook for another minute until fragrant, add the cooked tofu back to the skillet and heat through, about 2 minutes.
