2 (12 oz) Packages Extra Firm Tofu (Drained and Cubed)
1 Cup Sugar
1 TSP Vanilla Extract
1/4 TSP Salt
1/4 Cup Vegetable Oil
2 TBSP Lemon Juice
1 Graham Cracker Crust
Preheat the oven to 350 degrees.
In the bowl of a food processor, add the lemon juice, tofu, vegetable oil, sugar, salt and vanilla extract and process until pureed.
Pour the puree mixture into the graham cracker crust and place in the preheated oven to cook for 20-30 minutes.
Once cooked, remove from the oven and refrigerate until chilled, serve cold with your choice of toppings.
