12 Oz Lasagna Noodles (Uncooked)
1 (12 Oz) Package Firm Tofu (Crumbled)
2 Eggs
1/4 TSP Salt
1/4 TSP Ground Black Pepper
1/4 TSP Ground Nutmeg
2 TBSP Milk
1 Cup Marinara Sauce
1 TBSP Dried Parsley
2 Cups Mozzarella Cheese (Shredded)
1/2 Cup Parmesan Cheese (Grated)
Preheat oven to 350 degrees.
In a large glass bowl, mix the tofu, parsley, eggs, marinara sauce, salt, milk, nutmeg, ground pepper and 1 cup of the mozzarella cheese until evenly combined.
Set aside.
Cook the lasagna noodles according to package directions.
Place a layer of lasagna noodle on the bottom of an oven proof baking dish, then spoon on some of the tomato mixture to cover evenly, followed by another layer of lasagna noodles, then one more layer of the sauce and finally, add another layer of the lasagna noodles.
Continue until all of the lasagna noodles and tomato sauce has been used.
Top the last layer of noodles with the remaining mozzarella cheese and the grated parmesan cheese.
Place into the preheated oven for 30-45 minutes, uncovered, until the top turns golden brown and begins to bubble.
Remove from the oven, allow to cool for 3 minutes before serving hot.
