1 Block Extra Firm Tofu (Sliced Lengthways into 4)
2 Cups Cherry Tomatoes
3 Cloves Garlic (Minced)
2 TBSP Fresh Basil (Chopped)
1/4 TSP Ground Black Pepper
1 TBSP Olive Oil
2 TBSP Balsamic Vinegar
Heat a non-stick skillet over medium-high heat, add olive oil and heat until shimmering.
Add the tofu slices and cook for 5 minutes, flip and continue to cook for another 3 minutes.
Remove tofu from skillet and set aside.
Wipe the skillet clean and place back on the heat, add the tomatoes, garlic, balsamic vinegar and basil and toss to combine.
Cook for 3 minutes until the tomatoes begin to soften and release their juices.
Remove from the heat.
Place a tofu slice on a serving plate and top with 1/4 of the tomato mixture, serve immediately.
