1 Package of Extra-Firm Tofu (Cut into 3/4" Cubes)
1 TBSP Olive Oil
2 TBSP Low-Sodium Soy Sauce
3 Large Cloves of Garlic (Minced)
1 Bunch of Green Onions (Finely Chopped)
1 TBSP Fresh Ginger (Minced)
1 TSP Chili Paste
10 Oz Baby Spinach
1 TBSP Toasted Sesame Seeds
2 TSP Sesame Oil
In a large non-stick skillet over medium high heat, heat the oil.
Once it is hot adding the tofu cubes and drizzle with a little soy sauce.
Saut?, stirring every minute or two until the tofu gets golden brown on all sides and the moisture has cooked off, roughly 10 minutes.
Add two thirds of the green onion, garlic, ginger, chili paste and the remaining soy sauce, stir and cook until the flavors start to build, roughly one minute.
Add several handfuls of the spinach, stirring continually so that as it wilts, you can add more.
Continue adding spinach until it?s all in the skillet and wilting.
Stir in the sesame oil and remove from heat, sprinkle with remaining green onions and serve with brown rice or zucchini noodles.
