2 TBSP Olive Oil
1 1/2 TBSP Lime Juice,
1 Clove Garlic (Minced)
1 1/2 TSP Chili Powder
1/2 TSP Ground Cumin
1/2 TSP Ground Paprika
Pinch of Cayenne Pepper
Pinch of Ground Black Pepper
1 Bock Form Tofu (Cubed)
In a medium glass bowl whisk together the olive oil, lime juice, garlic, chili powder, cumin, paprika, cayenne and season with pepper.
Place tofu cubes into a gallon sized resealable bag and pour marinade over the tofu, seal the bag and gently shake to coat all of the tofu with the marinade, place bag in refrigerator to 1 hour.
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
Place marinated tofu on the prepared baking sheet, bake in the preheated oven for 12-15 minutes or until cooked through, the tofu should be slightly firm when prodded with a fork.
Break tofu into bite sized pieces and layer over warm tortillas with your choice of toppings.
