Traditional Irish Potato Cakes Recipe.


Ingredients:


3 Cups Russet Potatoes (Cooked and Mashed)
1/2 Cup All Purpose Flour
1 TSP Onion Powder
12 TSP Salt
4 TBSP Butter
1/2 Egg (Beaten)


Recipe Instructions:


In a large glass bowl add the mashed potato and allow to sit at room temperature for 45 minutes.
Mix in 1/4 cup of the flour, the onion powder and salt using a potato masher.
Melt 2 TBSP of the butter and add to the potato mixture with the beaten egg to form a stiff dough.
On a floured surface, add the dough and knead in the remaining flour.
Using a metal circular cutter, cut 1/2" thick rounds out of the potato dough.
In a large non-stick skillet melt the remaining butter over a medium heat.
Add the potato cakes and reduce the heat to medium-low and cook until the bottoms of the potato cakes turn golden brown.
Flip the potato cakes and continue to cook until the other side golden brown and the cakes are heated though.
Repeat with the remaining potato cakes and serve hot.
