For Turkey:
15LB Whole Turkey
1 Large Onion
1 Lemon (Halved)
5 Sticks Celery
4 Cloves Garlic
3 TBSP Avocado Oil
1 TBSP Salt
1 TBSP Black Pepper
For Herb Butter:
1/2 Cup Salted Butter
1/4 Cup Chopped Parsley
4 Cloves Garlic
Preheat oven to 350 degrees.
Mince garlic and add to a small bowl, combine with parsley and butter and mix until evenly distributed.
Rinse the turkey inside and out, pat skin dry and place onto a rack inside a roasting pan.
Chop the celery into chunks, slice lemon in half and mince the garlic.
Place celery, lemon and minced garlic into the turkey cavity.
Place your fingers/hands under the skin of the turkey to loosen it from the meat.
When loosened rub the herb butter mixture over as much of the turkey meat below the skin as possible.
Pour the avocado oil over the turkey and sprinkle with salt and pepper.
Place turkey into the oven (breast side up) for 2.
5-3 hours.
Half way through, baste the turkey with its own juices in the pan.
Once the breast meat registers at a temperature of 160F take the turkey out of the oven.
Cover turkey with aluminum foil for 30 minutes to finish the cooking process.
Carve and enjoy!
